I baked this pound cake last week and it tasted exactly like Sara Lee's as mentioned in the website.I took this recipe from here and it came out soft and moist.It tasted even better the next day.A perfect snack with a hot cup of coffee.
Ingredients:
Cake flour - 1 cup
Make your own cake flour by measuring 1 cup of all purpose flour.Remove 2 Tbspln of flour and add 2 tablespoon of cornflour/cornstarch and sift for 2 or three times.
Butter - 1/2 cup softened at room temperature.
Condensed Milk -1 cup
Vanilla extract- 2 tsp
Baking powder -3/4 tsp
Sugar - 1/4 cup
Eggs- 2
Salt - 1/4 tsp
Method:
Preheat the oven to 350 deg F.
Grease and flour a loaf pan.
Sift cake flour and baking powder together.
Cream butter and sugar together until light and fluffy.
Add the salt,vanilla extract and mix well. Pour in the condensed milk and cream well.Add in the flour in 3 additions.Mix well.
Finally add eggs one at a time and mix well till smooth.
Bake for about 1 hr.Mine was done within 50 minutes itself.So start checking after 45 minutes .

Chocolate Chip Blondies
I cant believe I didn't blog for almost 2 months.I tried a lot of recipes but I must admit it was my sheer laziness that kept me away from my blog baby.I had pinned this recipe long ago.
It was so easy to put everything together to make this wonderful Blondie.
Don't know why ..my blog has only 1 or 2 blondie recipes.Blondie got its name from the color it takes after being baked.Unlike brownies,blondie batter do not use cocoa powder to mix it up in the batter, though chocolate chips are being used as addons.

Ingredients:
Allpurpose flour - 1 1/2 cup
Brown Sugar- 1 1/2 cup
Baking Powder - 1/2 tsp
Salt - 1/2 tsp
Butter -1/2 cup melted and cooled
Vanilla Extract - 1 tsp
Eggs - 2
Semisweet Chocolate chips - 1 cup
Method:
In a large bowl, combine the brown sugar, butter, eggs and vanilla just until blended. Combine the flour, baking powder and salt; add to brown sugar mixture. Stir in chocolate chips .

Dulce de Leche Brownies
I had bookmarked this recipe looong ago.I kept on postponing to try this recipe due to some reasons..Finally here Iam with the famous Dulce de leche brownies by the pastry chef David Lebovitz.
It was soo easy to make and it has become my new favorite brownie recipe.
Adapted from The Sweet Life in Paris (Broadway Books)
Ingredients:
Unsalted Butter - 8 tablespoons
Semisweet chocolate chips- 6 oz
Unsweetened Cocoa powder - 1/4 cup
Eggs - 3
Sugar - 1 cup
Vanilla Extract - 1 tsp
All purpose flour - 1 cup
Dulce de leche - 1 cup .I microwaved the dulce de leche for 20 seconds because it was so hard to swirl.
Method:
Pre-heat the oven to 350 def F.
Line a 8*8 square pan with foil leaving a little extra down the sides.Grease the bottom and sides with little bit of melted butter.
In a pan,on medium heat melt the butter.Add the semisweet chocolate chips and sir constantly on low heat to melt the chocolate.
When it is slightly cool add the cocoa powder and whisk till smooth.Add eggs one at a time,then sugar and all purpose flour till combined.
Now add the batter(half of it)into the prepared pan.Then add 1/3 of dulce de leche .Drop spoonful leaving space between them.Swirl with a knife.
Then add the remaining brownie batter and spread them evenly.Then add the remaining dulce de leche in dollops.Swirl with a knife slightly.
Bake for 35 minutes.Check by inserting a toothpick in the center.If it comes with little crumbs,then it is done.

Hershey's best brownies
Ive tried 3 or 4 brownie recipes so far and this one will surely be in my recipe binder.It uses simple and very few ingredients and so easy to make.

I didn't make the frosting.
Ingredients:
All purpose flour - 1/2 cup
Cocoa Powder - 1/3 cup
Unsalted Butter melted - 1/2 cup
Sugar - 1 cup can be reduced to 3/4 cup
Vanilla essence -2tsp
Baking Powder - 1/4 tsp
Salt - 1/4 tsp
Eggs -2
Chopped Walnuts - 1/2 cup
Method:
Preheat oven to 350degF. Grease a 9 inch square pan.
Stir together butter, sugar and vanilla in bowl. Add eggs; beat well with spoon. Stir together flour,
cocoa, baking powder and salt; gradually add to egg mixture, beating until well blended. Stir in nuts, if desired. Spread batter evenly in prepared pan.
Bake 20 to 25 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.
Cut into squares.
Yield - 16 brownies

Cinnamon Chocolate Bundt Cake
I finally bought a 12 cup bundt pan!!!YAY!!
I had bookmarked a lot of recipes even before my pan arrived..
The foodlibrarian website has tons of bundtcake recipes to choose from.I tried a simple cinnamon chocolate bundt cake. It was super moist,soft and tasted yummmmmm!!
Ingredients:
Water - 1 cup
Vegetable oil - 1/2 cup
Unsalted butter - 1 stick
Unsweetened cocoa - 1/4 c plus 1 T (or 5 T)
All-purpose flour - 2 cups
Sugar - 2 cups
Salt - 1/2 tsp
Cinnamon - 1 1/2 tsp
Buttermilk - 1/2 cup
Baking soda - 1tsp
Eggs - 2
Vanilla - 1 tsp
Method:
Bring to a boil in a pot: Water, oil, butter and cocoa
In a large bowl, combine together with a whisk: flour, sugar, salt, cinnamon
Add the chocolate mixture to the flour and mix until combined.
Add the buttermilk and baking soda and mix.
In a small bowl, combine the eggs and vanilla. Add to the batter and combine.
Pour batter into greased 10 or 12-cup Bundt pan and bake in a preheated 375 degree oven for 30-35 minutes (the original recipe says 25 minutes, so start checking then).
Cool in pan.
Top with a dusting of powdered sugar or a simple glaze of powdered sugar and milk or water.

Strawberry Bread
I know Iam not blogging regularly.This is because my kid's summer vacation has started and we had been to my BIL's place for vacation.
This time we had great fun camping at a state park.The kids really enjoyed a lot.It was a nice experience for them being without TV,video games for 2 days.
I had made this strawberry bread more than a month ago.It was lying in my draft.Strawberries are aplenty in stores now.So I never miss to grab a box of these antioxidant-rich fruit during errands.

I halved the recipe to make 1 loaf and made some changes according to reviews.
Ingredients:
All purpose flour -1 1/2 cup + 1 tablespoon
Baking soda - 1/2 tsp
Sugar - 1 cup-- can be reduced to 3/4 th of a cup
Salt - a pinch
Cinnamon Powder - 1 1/2 tsp --I reduced it to 1/2 tsp
Strawberries - 1 cup chopped-- I added another cup to make it 2 cups.
Vegetable oil - 1/2 cup
Eggs - 2 beaten
Pecan - 1/2 cup chopped optional--I didnt add.
Method :
Slice strawberries, and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.
Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans.
Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans on wire rack for 10 minutes. Turn loaf out and cool completely.

Choco Carrot Loaf
Nowadays I spend more time on Pinterest!!I get sucked in there for a long time even more than facebook.I had pinned this recipe onto my boards long time ago.Actually I have a lot of recipes pinned to be tried.
Finally made up my mind to bake this when my son asked me to bake a chocolate cake.I didnt want to bake a simple plain chocolate cake.I wanted a veggie or fruit as one of the main ingredinets in addition to the chocolate.So I googled up and found this recipe here.It sounded healthy and it was moist and delicious.

mix and beat until well mixed, add grated
carrots, mix well.
If using chocolate chips fold in the batter.
Pour the batter into a loaf pan bake for about 30-40 minutes or
until a toothpick inserted in the middle comes out clean.Mine was done in 50 minutes.
Let cool in
the oven for 10 minutes, and turn onto a wire rack to cool completely

Brownie Muffins
This muffin is definitely for the chocoholics as it contains cocoa,nutella and chocolate chips.
There can never be an overdose of chocolate for the chocoholics..Isn't it??
I followed the recipe featured here.
Ingredients:
Self Raising Flour - 1 1/2 cup
Ground Hazelnuts - 1/2 cup
Cocoa powder-1/3 cup
Sugar -1/3 cup
Melted Butter - 60 grams
Chocolate Chips -1/2 cup
Nutella -1/2 cup
Milk -3/4 cup
Sour cream -1/2 cup
Egg - 1 lightly beaten
Method:
In a large bowl, combine flour, cocoa powder, sugar.
Add in the nutella, egg, milk, sour cream and butter. Gently stir to combine.
Stir in the chocolate chips. Spoon the mixture into a prepared muffin tray.
Bake for 20 – 25 minutes.

Starbucks Banana Walnut Bread
If you love pastries from Starbucks,you would definitely love this.The other day I was searching for recipe of banana bread and I found this recipe in this blog .I never knew Starbucks actually hands out recipe cards to their customers.This recipe of Starbucks is surely a keeper.
It turned out very moist,soft and tasty.
Ingredients:
All purpose flour - 2 cups
Baking soda - 1tsp
Salt-1/4 tsp
Sugar -1 cup.But i added only 3/4 cup and still it was sweet enough
Vegetable oil -1/2 cup
Vanilla extract - 1tsp
Buttermilk - 2 tbsp.I substituted sour cream
Banana -3 mashed
Walnuts -1/2 cup and 1/3 cup chopped
Method:
Pre-heat the oven to 325
degrees.
Grease a 9x5x3 loaf pan
and dust with flour.
Blend together the
flour, baking soda and salt and set aside.
Mix together the egg,
sugar, and vegetable oil until combined.
Add the flour mixture
and when blended, add the sour cream, vanilla, and mashed bananas and
mix until combined.
Fold in ½ cup chopped walnuts and pour batter into prepared loaf pan. Top batter with remaining chopped walnuts.
Bake for 45-60 minutes, until a toothpick inserted in the center comes out clean.

Cool for 10 minutes on a wire rack before removing from pan.

Chewy Cocoa Brownies
Iam back after a loong break.I was bit tied up with my third grader.His state tests got over last week.So last month was a lil hectic,preparing him for his tests...
So coming to this recipe,I made these for a potluck during the spring break,spotlight being kids.So i decided to make this kid-friendly dessert.It can be served with vanilla icecream.
It turned out so good that they were gone in a flash.

Nutella Banana Bread

I halved the recipe to make 1 loaf.This recipe is featured in foodgawker and man!!!foodgawker makes me hungry all the time and I end up trying at least 1 recipe every time I browse that site.
Ingredients:
All purpose flour - 1 1/2 cups + 2tbsp
Baking soda - 1 tsp
Cinnamon - 1/4 tsp
Eggs - 2 at room temperature
Sugar - 1 cup
Vegetable oil - 1/2 cup
Mashed bananas - 2 large
Nutella - 1/3 cup
Vanilla-1 tsp
Salt -a pinch
Sour cream or yogurt -2tbsp
Hazelnuts toasted and chopped - 1/2 cup
Method:
Heat oven to 350 deg F.
Line a loaf pan with parchment paper.
Sift together flour, baking soda, cinnamon, and salt into a bowl.
Beat together eggs and sugar in bowl until pale.
Add oil and then mix banana,yogurt,nutella and vanilla.
Fold in flour mixture and hazelnuts.
Pour it into the prepared loaf pan and bake for about 1 hr.
Cool loaf in pan for 10 minutes and then turn loaf into a rack.Cool completely and then slice it.

Carrot and Pineapple Loaf
I usually bake on Friday evenings or Saturday afternoons.Iam really into healthy baking these days.This loaf has no butter and is loaded with healthy carrots,walnuts and the pineapple gives a tropical touch.
Recipe source:Adapted from Blissful Baker ,Sugar Duchess originally from the book"The taste of home baking".I tweaked the recipe to make it even more healthier by substituting a part of all purpose flour with wheat flour.
Ingredients:
All purpose flour - 3/4 cup
Wheat flour - 3/4 cup
Baking soda - 1/2 tsp
Salt-1/4 tsp
Sugar-2/3 cup
Freshly ground cinnamon -1/4 tsp(1/2 tsp in the original recipe)
Freshly ground cardamom- 1/2 tsp not in the original recipe
Corn oil or vegetable oil -1/2 cup
Whole Egg - 1
Egg white- 1(i omitted this)
Grated carrot - 2 medium
Crushed pineapple - 3/4 of 8 oz can drained (After tasting a slice I felt that shoud have added the whole can)
Vanilla essence - 1 tsp
toasted and chopped pecans - 1/2 cup(I substituted walnuts)
Method:
1. Preheat oven to 350 degrees F and line a 8×4 inch loaf pan with parchment paper,makes life lot more easier.
2. In a large bowl, whisk together all-purpose flour, whole wheat flour, sugar, baking soda, cinnamon, cardamom and salt.
3. In a separate bowl, lightly beat the egg . Add carrots, oil, pineapple, and vanilla. Mix thoroughly.
4. Pour wet ingredients into dry ingredients and stir until just combined. The batter will be very thick. Fold in walnuts.
5. Scrape batter into prepared loaf pan and bake in preheated oven for 50-60 minutes, or until toothpick inserted in center of loaf comes out clean.Mine took almost 1 hour 10 minutes to bake.
Cool for 10 minutes on a wire rack, then remove from pan and cool completely on wire rack.

Freshly ground cardamom- 1/2 tsp not in the original recipe
Corn oil or vegetable oil -1/2 cup
Whole Egg - 1
Egg white- 1(i omitted this)
Grated carrot - 2 medium
Crushed pineapple - 3/4 of 8 oz can drained (After tasting a slice I felt that shoud have added the whole can)
Vanilla essence - 1 tsp
toasted and chopped pecans - 1/2 cup(I substituted walnuts)
Method:
1. Preheat oven to 350 degrees F and line a 8×4 inch loaf pan with parchment paper,makes life lot more easier.
2. In a large bowl, whisk together all-purpose flour, whole wheat flour, sugar, baking soda, cinnamon, cardamom and salt.
3. In a separate bowl, lightly beat the egg . Add carrots, oil, pineapple, and vanilla. Mix thoroughly.
4. Pour wet ingredients into dry ingredients and stir until just combined. The batter will be very thick. Fold in walnuts.
5. Scrape batter into prepared loaf pan and bake in preheated oven for 50-60 minutes, or until toothpick inserted in center of loaf comes out clean.Mine took almost 1 hour 10 minutes to bake.
Cool for 10 minutes on a wire rack, then remove from pan and cool completely on wire rack.

Healthier Banana Bread
I had lots of bananas sitting on my counter top.I wanted to bake banana bread,but a healthier and guilt-free version.So when i was searching for a low fat banana bread recipe,I stumbled upon this recipe in about.com.It had no butter,and the amount of sugar used is almost half compared to other recipes and best of all whole wheat flour is substituted for half of all purpose flour.
Ingredients:
All purpose flour - 1 cup
Whole wheat flour - 1 cup
Baking soda - 3/4 tsp
Salt-a pinch
brown sugar-1/2 cup packed firmly
Corn/Canola oil - 1/4 cup
Vanilla essence -1 tsp
Buttermilk - 1/2 cup
(I made my own butter milk by mixing 1/2 cup of milk with 1 1/2 TBSP of lemon and allowed it to stand for 5 minutes.Then it can be used in the place of regular butter milk)
Bananas - 2 mashed
Egg - 1 at room temperature
Method:
Preheat oven to 350 degrees F. Coat an 8 1/2 inch x 4 1/2 inch loaf pan with nonstick cooking spray.
Whisk flour, baking soda and salt together in a large bowl. Stir in brown sugar.
In a medium bowl, combine oil, egg, buttermilk and vanilla extract. Add these ingredients to the dry ingredients. Stir in mashed bananas.
Pour batter into the loaf pan and bake in the oven for 50-60 minutes, until a toothpick placed in the center comes out clean.

Chow's intense brownies
These brownies are the best brownies Ive baked so far.It was chewy,fudgy and moist too.
This recipe is taken from chow.com .This is definitely a keeper.Its more of a brownie for grown-ups as it is not so sweet.

Ingredients:
- Bittersweet chocolate (not unsweetened) - 6 ounces(I used Nestle's semisweet chocolate chips)
- Unsalted butter (1 stick) - 8 tablespoons
- Large eggs, at room temperature - 2
- sugar - 1 cup
- Unsweetened cocoa powder 1 Tablespoon
- Vanilla extract - 1 tsp
- 1 teaspoon brewed espresso (optional)(I didn't use it)
- 1/4 teaspoon plus 1/8 teaspoon fine salt(I used only a pinch)
- All purpose flour - 1 cup
- Heat the oven to 350°F and arrange a rack in the middle. Line an 8-by-8-inch glass baking dish with aluminum foil.
- Combine the chocolate and butter in a medium saucepan and cook over medium-low heat, stirring frequently, until evenly melted. Remove from the heat and let cool to room temperature.
- Combine the eggs, sugar, cocoa powder, vanilla, espresso (if using), and salt in a large bowl and briefly stir until just evenly incorporated. Add the cooled chocolate and mix until uniform in color. Add the flour and stir until just incorporated (no white streaks should remain).
- Transfer the batter to the prepared baking dish and bake until a tester inserted into the center of the brownies comes out with few crumbs clinging and not totally clean like while baking cakes.A nice crust will form on the top and the brownies will start puling away from the sides.It took about 40 minutes for me but the original recipe says to bake for about 25 to 30 minutes.
- Remove from the oven and let cool completely before cutting.

Carrot and Zucchini Muffins
This is a healthy breakfast muffin which contains loads of veggies and very less amount of fat.
Ive adapted this recipe from King Arthur's flour blog.
Ingredients:
All purpose flour - 2 cups
Baking powder - 2 tsp
Salt - 1/4 tsp
Vegetable oil - 1/4 cup
Sugar - 1 cup
Cardamom powder - 1tsp(or you can use cinnamon powder)
Eggs - 2
Grated Zucchini - 1 cup
Grated Carrot - 1 cup
Chopped walnuts - 1/2 cup(optional)
Method:
Preheat the oven to 370deg F.
Line the muffin pan with liners.
In a bowl,mix the sugar,oil and eggs and beat well.Add the grated vegetables and cardamom powder.Then add the chopped walnuts.
In another bowl,mix the flour,salt,baking powder.Add the dry ingredients into the wet ingredients and fold till incorporated.
Divide the mixture into the muffin liners.Bake for 17 to 20 minutes.Insert a toothpick into the muffin and if it comes out clean,remove from the oven.
Let it cool for about 10 minutes.

Vanilla and Chocolate Marble cake
Marble cake was in my baking to-do list for a long time.It was so easy to make than I thought and I got the swirls reasonably good for the first time:-)
Ive taken this recipe from allrecipes.com and made some changes according to the reviews.
Ingredients:
All purpose Flour - 2 cups
Baking powder - 2 tsp
Salt - 1/4 tsp
Sugar - 1 1/3 cup
Cocoa Powder - 2tbsp
Butter - 1/2 cup(softened at room temperature)
Vanilla - 1tsp
Eggs - 2
Milk - 1 cup
Method :
Grease and flour an 8 inch round pan.
Preheat the oven to 350 deg F.
In a bowl cream the butter and sugar until light and fluffy.Add eggs one by one and beat until fluffy.
Add the vanilla essence.
In another bowl mix the flour,salt,baking powder.
Add a small amount of dry ingredients to the wet ingredients.Gradually add little bit of milk and fold.Alternate between the flour mixture and milk and fold.
Separate into two parts.Mix the cocoa powder with melted butter and add to one part of the flour mixture.
Put one spoon of vanilla mixture in the center of the prepared pan.Now add 1 spoon of cocoa mixture on top of the vanilla mixture.
Alternate between vanilla and cocoa.Finally swirl the top with a knife until you get a marble effect.Do not overdo it because you might lose the definition of either vanilla or cocoa mixture.
Bake for about 30 to 35 minutes and check by inserting a tester in the middle.If it comes out with a little bit of crumb then the cake is done.

Nigella Lawson's Chocolate chocolate chip muffins
I love her recipes because they are always never-let-you- down recipes
Its been a while since I baked something.I was planning to bake something with nutella ,since a jar is just in my pantry being consumed by me a spoonful a day :)which is definitely not good for me but ended up making these.These muffins were moist and fluffy and chocolatey.
Ingredients:
All purpose muffins - 1 3/4 cups
Baking Powder - 2 tsp
Baking soda - 1/2 tsp
Sugar - 3/4 cup
Cocoa powder - 2Tbsp
Semi sweet chocolate chips - 3/4 cup and few for sprinkling on top
Vegetable oil - 1/3 cup
Egg - 1
Milk - 1 cup
Vanilla essence - 2 tsp
Method :
Preheat the oven to 400 deg F.
Line the muffin tin with liners or spray with a nonstick spray.
In a medium bowl mix the all purpose flour,baking powder,baking soda,cocoa powder,semisweet chocolate chips.
In the 2 cup measuring jar,measure the milk,then oil.Add the egg and vanilla essence.
Mix everything thoroughly.
Add the wet ingredients to the dry ingredients and fold.The mixture will be lumpy.
Fill the muffin liners up to 3/4 th.
Bake for about 20 minutes or until the tester when inserted into the muffin comes out clean.
Store in airtight container when completely cool.

Back after a long break with Butter cake!!
Ive been in hibernation for a loooong time.. We relocated to a nearby city called Arcadia from Pasadena,the reason being my elder kid's education.
Arcadia boasts having one of the best school districts in California.
I like my kitchen in this apartment a lot cuz its bigger and it is well lit.Well lit means.... Brighter and better pictures for my blog:)
So coming to the recipe..It is one of the simplest tea cake.Rich,soft and moist and it tasted even better the next day.
Ingredients:
All purpose flour - 1 1/2 cup
Baking powder - 3/4 tsp
Sugar - 1 cup(you can reduce to 3/4 cup if you want)
Melted Butter - 1/4 pound
Vanilla essence - 2tsp
Eggs - 2
Method:
Grease and flour a 9 inch round cake pan.
Preheat the oven to 350 deg F.
Mix the flour,baking powder.
In another pan mix the butter with sugar.Then add the eggs,vanilla essence.
Add the dry ingredients to the wet ingredients and mix until just flour is incorporated into the wet ingredients.It would be lumpy.
Pour the mixture into the prepared pan and bake for about 30 to 35 minutes until a tester inserted into the middle of the cake comes out clean and the cake springs up when touched.
The cake would be golden brown in color when done.
Allow it to cool completely.

Strawberry Shortcake Muffin
Ive been MIA for a while because my kid's summer vacation has started and I'm frequently hearing the "Iam SO bored, Ma" dialogue.This summer is even more challenging, taking care of 2 kids.I barely log on to blogger.
I managed to squeeze some time to post this recipe.I love browsing the foodgawker website.Whenever Iam in need of a recipe, I browse this site as it has so many versions of the same recipe posted by many food bloggers.When I was searching for strawberry muffin recipe this one grabbed my attention.The name itself was catchy.It tasted so good.

In large bowl mix together the flour, baking powder,salt and sugar. Cut in cold butter with a pastry blender (or two knives) until it is in small pea-size pieces.
In small bowl mix the egg, vanilla and milk. Add all at once to flour mixture. Stir with spoon until just blended. Gently mix in the diced strawberries.
Spoon into muffin cups, making sure each muffin has some strawberries and bake for about 25 minutes. Cool completely in pan before removing.

Very Vanilla Muffins
What would you do if you bought a tub of Vanilla Yogurt by mistake and you don't like flavoured yogurt at all??Bake Vanilla muffins!!I found this recipe in Recipezaar.
This recipe has vanilla yogurt and vanilla essence as the main ingredient.The aroma of the vanilla filled the whole house while baking...It was spongy,light and smelled divine..I added extra sugar to the muffins and sprinkled little bit of sugar on top of each muffin.It gave a lovely brown colour to the muffin tops.
Ingredients:
All purpose flour - 1 3/4 cup
Sugar - 1/3 cup plus 1 Tbsp for sprinkling on top.
Melted Butter - 1/2 cup
Egg - 1 beaten
Vanilla flavored yogurt - 1 cup(can also use plain yogurt and increase the amount of vanilla essence)
Vanilla essence - 1 Tbsp
Baking Powder - 2 1/2 tsp
Baking Soda-1/4 tsp
Salt - 1/4 tsp
Method:
Preheat oven to 400º. Line 12 muffin pan cups with paper liners.
In a large bowl, stir together flour, 1/3 cup of the sugar, baking powder, baking soda, and salt. In a medium bowl, stir together egg, yogurt and vanilla, pour over dry ingredients. Add melted butter and stir just to blend (do not over mix). Quickly spoon batter into paper liners, filling each muffin cup to the top. Sprinkle with remaining 1 tbsp of sugar.
Bake muffins about 20 minutes, or until a toothpick inserted in center comes out clean. Remove muffins to wire rack and let cool 10-15 minutes before serving.
